This has to be the best waffle recipe ever. It's a little more work - but well worth it.

FLUFFY WAFFLES
2 cups all purpose flour
1 tbsp. sugar
2 tsps. baking powder
1/2 tsp. salt
3 eggs, separated
2 cups milk
1/4 cup vegetable oil
In a bowl, combine the flour, cugar, baking powder and salt. Combine the egg yolks, milk and oil; stir into dry ingredients just until moistened. In a small mixing bowl, beat egg whites until stiff peaks form; fold into batter. Bake ina preheated waffle iron according to manufacturer's directions.
